At Montia we are gatherers and farmers. And in order to cook, more than a knife, we need a pair of mountain boots.
We go back to our roots, to nature and to the mountains to create, with the help of local farmers and breeders, concentrated stews, sauces with depth and light combinations. Always seasonal, slow-cooked and with a lot of patience.
We like the unconventional, experimentation and surprise, that’s why our winery is nourished with cloudy, extreme, unfiltered and sulphite-free wines. We create unique symbiosis with the pairing, atmospheres of flavour that enhance and complete each dish.
The surrounding space, the orchard, the hides, the light, the furniture... They are part of the experience and a symbol of our way of doing things: in a natural way, with care and by hand, working with local products and artisans.
